Roberto's Cuban Seasoning    NEW
This may seem hard to believe, but this summer Roberto's was the sweetest pepper I have ever tasted.  We had a very strange year, so I will taste it again in 2010, but these slightly warm chiles have such an intense sugar content along with that tropical smokey aroma that you will be thrilled that you grew them.  Very nice!

Rocotillo     NEW
These bright red thin fleshed peppers are shaped like patty pan squashes.  They are full fruity sweetness with very little heat.  They are fabulous for cooking and salsas.  Plants grow tall and will be covered with these petite gems.

Pimiento De Padron    NEW
All the craze for tapas of late. These are served in fine restaurants at happy hour, fried in iron skillets with olive oil when they are at the very early stage  Young peppers have slight heat, but as they mature they become fiery.  And for those of you who like to gamble, sometimes an occasional unripe pepper can be devastating.  Just warning you.

Italian Relleno    NEW
A highly productive Relleno type.  Fruits are 1 1/2 by 6 inches.  Their mild heat nad nice thick walls makes them wonderful for frying and roasting.  Try some of these fried with eggs in the morning for a tasty breakfast.

Cowhorn   
Large horn shaped hot peppers go from green to red.  Old heirloom you used to see at farmer's cooperatives.  Great roasters.

Peach Habanero    
This variety is very pretty.  Fruits start out a celery green and turn a very delicate light peach color.  Nothing delicate about the flavor which is scorching!  These types make gourmet additions to salsas, especially the ones where fruit is an ingredient, such as honeydews or cantaloupes.

Mustard Habanero   
Pastel violet streaking on celery color makes this habanero unique and attractive.   Mustard is from a cross from the garden of avid heirloom enthusiast and author, William Woys Weaver who stabilized and named it.  As the violet fades, color changes on these very hot fruits
to a vivid mustard yellow- orange.  Citrus smoky flavor.

Fatali
You will develope a fatal attraction to these 1x4 inch, crinkled, screaming yellow chiles.  This variety was a real hit in the garden this summer.  It makes incredible hot sauce that is very aromatic with citrus and smoky notes.  There are plenty of peppers to pick, as the plants are just covered with them.  Very, very hot!

Hungarian Hot Apple 
Thick walled, squat fruits are very juicy and crunchy.  They are both apply sweet and hot. Great fresh, but when you grill some chops this summer, toss a few of these on the grill too.  Yellow to red.

Bright orange and extremely hot.  Fruits are exact shape and size of chicken hearts which the name means in German.

Tobago Sweet Scotch Bonnet 
Same smoky flavor as the hot variety, only these are sweet with just a hint of heat and would be a good choice for those of you who would love to try the exotic flavor of this type, but aren't into too much burn.  This is a favorite here for making incredible sauce, which comes out the most brilliant orange-red color, and is excellent for seasoning.   We use our sauce for hot wings.

Anaheim Chile
Glossy, smooth, dark green,  2 x 12-14 inches, moderately hot chiles. Plants set out huge crops of fruits that are great for Southwestern cooking, (This is the Chile Rellenos pepper. ) They turn bright red when fully ripe.

Limon Chile 
This is our favorite chile here.  Thin fleshed, crinkled, bright lemon gems are extremely hot. Small pendant shape fruits have a delicious smoky- citrus flavor. Plants will be completely covered in peppers.  Make some dry spice rub to put on fish and chicken by drying in your electric dehydrating, then grinding in a mill.  We can quarts of hot sauce by boiling a full pot of peppers in 1/2 vinegar ( white or apple cider ) to 1/2 water and then pureeing in a processor.  It tastes just like lemon and is crazy good!

Numex Big Jim
Loads and loads of tapered chiles up to 12" long!  An large version of the Anaheim type, it was developed at the University of New Mexico in 1975.  Green to scarlet fruits from large bushy plants are moderately hot and fantastic for cooking, grilling or stuffing.
